Melon juice tss 10 brix, 0.3 percent acidity, 1 percent pectin, and 100 ppm sodium benzoate. By maintaining a glass bottle and sterilizing 96 centigrade heat for 5 minutes, the acceptable quality criterion is that it can remain at a normal temperature of 37 centigrade for 6 months.
Melon juice candy
To make a candy, which relieves heat, 2 cups of melon juice and half a teaspoon of sugar are placed in a kulfi mold, which is kept in the freezer for 8 hours.
